Creamy Burrata Pea Pasta is a delightful recipe that combines the creamy richness of burrata cheese with the bright flavors of fresh peas and aromatic herbs.

This dish is not only easy to make but also a feast for the eyes and the palate.

Whether you’re enjoying a cozy family dinner or hosting a casual get-together, this pasta is sure to impress with its vibrant colors and delicious taste.

Ingredients

  • 8 ounces pasta of choice (we used ditalini – be sure to reserve some pasta water for the sauce)
  • 3 tbsp olive oil, divided
  • 1 cup finely chopped leeks
  • 2 tsp minced garlic
  • 12 oz fresh or frozen peas (2 ½ cups), divided
  • 1 tbsp finely chopped mint
  • 2 tbsp finely chopped dill
  • 1 tsp lemon zest
  • 1 tsp salt
  • ¼ tsp ground black pepper to taste
  • 1 cup chicken or vegetable broth
  • 1 tbsp freshly squeezed lemon juice
  • 1/4 cup grated parmesan
  • For topping (optional): 8 oz burrata, olive oil, more lemon zest, pea shoots, red pepper flakes

Step 1: Cook the Pasta

Begin by cooking the pasta according to the package directions in salted water.

Make sure to reserve about 1 cup of pasta water before draining.

This starchy water can be helpful for adjusting the sauce consistency later on.

Step 2: Sauté the Leeks and Garlic

Heat 2 tablespoons of olive oil in a skillet over medium heat.

Add the finely chopped leeks and sauté for about 4-5 minutes, or until they are softened and slightly translucent.

Next, add the minced garlic and cook for an additional 2-3 minutes, until fragrant.

Step 3: Prepare the Pea Mixture

To the skillet with leeks and garlic, add one cup of the peas, finely chopped mint, dill, lemon zest, salt, and ground black pepper.

Stir well and let the mixture cook for 6-7 minutes, or until the vegetables are tender and well combined.

Step 4: Blend the Sauce

Transfer the pea and leek mixture to a blender.

Add the broth and lemon juice. Blend until the mixture is smooth and creamy.

This will create a lush, green sauce that will coat your pasta beautifully.

Step 5: Sauté Remaining Peas

In the same skillet, add 1 tablespoon of olive oil and the remaining peas.

Sauté for about 5 minutes, until they are softened and slightly caramelized.

Step 6: Combine Pasta and Sauce

Add the cooked pasta and the pea sauce to the skillet with the sautéed peas.

Remove the skillet from the heat and stir well to coat the pasta in the sauce.

If you find the sauce too thick, gradually add a few tablespoons of the reserved pasta water until the desired consistency is achieved.

Step 7: Serve and Garnish

For an extra touch of luxury, top the pasta with 8 ounces of burrata cheese, a drizzle of olive oil, extra lemon zest, pea shoots, and a sprinkle of red pepper flakes.

The burrata will melt into the pasta, adding a creamy richness that pairs perfectly with the vibrant pea sauce.

Alternatively, enjoy the pasta as is for a lighter version.

Creamy Burrata Pea Pasta is a celebration of spring flavors and simplicity.

The creamy burrata adds a decadent touch, while the fresh peas and herbs bring a burst of freshness to every bite.

This dish is not only delicious but also visually appealing with its vibrant green color and elegant toppings.

Whether you’re a seasoned cook or a kitchen novice, this recipe is a great way to bring the taste of spring to your table.

Enjoy this delightful pasta and make it a staple in your spring meal rotation!
