Instructions:

  1. Prepare the Scrambled Eggs:
    Start by whisking together the eggs, cottage cheese, a pinch of salt, and pepper in a bowl. Heat a skillet over medium heat and add a little oil. Pour in the egg mixture and cook, stirring occasionally, until the eggs are fully scrambled. Once done, transfer them to a plate and set aside.
  2. Warm the Beef:
    In the same skillet, add your leftover beef roast. If you don’t have leftover beef, any shredded beef will work well. Warm the beef through, stirring occasionally to ensure even heating.
  3. Assemble the Quesadillas:
    Lay one tortilla flat on a clean surface. On one half of the tortilla, sprinkle 2 tablespoons of shredded Colby Jack cheese. Next, layer half of the scrambled eggs, followed by 1/3 cup of the warmed beef. Top with another 2 tablespoons of cheese. Fold the tortilla in half and gently press down to seal. Repeat the process with the second tortilla.
  4. Cook the Quesadillas:
    Heat a skillet over medium-low heat and add a little oil. Place one of the filled tortillas in the skillet and cook for a few minutes on each side, or until the tortilla is golden and crispy and the cheese inside has melted. Repeat with the second quesadilla.
