- 2 Mission carb balance flour tortillas
- 4 eggs
- 1/4 cup low-fat cottage cheese
- 2/3 cup leftover beef roast (any shredded beef works)
- 8 tablespoons shredded Colby Jack cheese
- Salt & pepper to taste
- Oil for cooking

- Prepare the Scrambled Eggs:
Start by whisking together the eggs, cottage cheese, a pinch of salt, and pepper in a bowl. Heat a skillet over medium heat and add a little oil. Pour in the egg mixture and cook, stirring occasionally, until the eggs are fully scrambled. Once done, transfer them to a plate and set aside. - Warm the Beef:
In the same skillet, add your leftover beef roast. If you don’t have leftover beef, any shredded beef will work well. Warm the beef through, stirring occasionally to ensure even heating. - Assemble the Quesadillas:
Lay one tortilla flat on a clean surface. On one half of the tortilla, sprinkle 2 tablespoons of shredded Colby Jack cheese. Next, layer half of the scrambled eggs, followed by 1/3 cup of the warmed beef. Top with another 2 tablespoons of cheese. Fold the tortilla in half and gently press down to seal. Repeat the process with the second tortilla. - Cook the Quesadillas:
Heat a skillet over medium-low heat and add a little oil. Place one of the filled tortillas in the skillet and cook for a few minutes on each side, or until the tortilla is golden and crispy and the cheese inside has melted. Repeat with the second quesadilla. - Serve and Enjoy:
