  • 1/4 tsp black pepper
  • 1/2 medium onion, sliced
  • 1 large carrot, thinly sliced
  • 1 medium bell pepper, sliced
  • 1 medium zucchini, sliced
  • 2 cups broccoli florets

For the Lo Mein Sauce:

  • 1 cup chicken broth
  • 1/3 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tsp sesame oil
  • 2 garlic cloves, pressed
  • 1 tsp fresh ginger, minced
  • 1/4 tsp white pepper (or black pepper)
  • 1/2 tbsp corn starch

Extras:

  • Salt and pepper
  • Oil for cooking
  • Sesame oil

Instructions:

  1. Prepare the Noodles:
  • Cook the noodles according to the package instructions, but stop one minute shy of the recommended time. This will ensure they’re perfectly tender yet still have a bit of bite.
  • Drain the noodles and toss them with a little sesame oil to prevent sticking. Set aside. For efficiency, start cooking the chicken and vegetables as soon as the water starts boiling and the noodles are cooking.
  1. Make the Lo Mein Sauce:
  • In a Pyrex cup or a small bowl, combine chicken broth, low sodium soy sauce, brown sugar, sesame oil, pressed garlic, minced ginger, and white pepper. Mix well until the sugar dissolves. Set this flavorful sauce aside.
  1. Cook the Chicken:
  • Heat 2 tsp of oil in a wok or large skillet over high heat. Add the sliced chicken breast, and season with garlic powder, onion powder, 1/2 tsp salt, and 1/4 tsp black pepper. SautĂ© for about 4-5 minutes, or until the chicken is browned. It’s okay if the chicken isn’t completely cooked through; it will finish cooking later in the sauce. Remove the chicken from the wok and set it aside.
  1. Sauté the Vegetables:
  • In the same wok, add another 2 tsp of oil. Toss in the sliced bell pepper, onion, and a pinch of salt and pepper. SautĂ© on high heat for 2 minutes, stirring frequently to prevent burning.
  • Next, add the zucchini and carrots with another pinch of salt and pepper. Continue to sautĂ© for another 2 minutes.
  • Finally, add the broccoli florets with a pinch of salt and pepper. SautĂ© for an additional 2 minutes.
  1. Combine Chicken and Vegetables:
  • Return the partially cooked chicken to the wok with the vegetables.
  1. Add the Sauce:
  • To the prepped Lo Mein sauce, stir in the cornstarch until well combined. Pour the sauce into the wok, allowing it to coat the chicken and vegetables. Cook for a few minutes until the sauce thickens and the chicken is fully cooked.
  1. Add the Noodles:
  • Add the cooked noodles to the wok, tossing everything together to ensure the noodles are evenly coated in the sauce. Let it cook for an additional minute or two.
  1. Serve and Enjoy:
  • Remove from heat and serve your Chicken Lo Mein hot. Any leftovers can be stored in the refrigerator for future meals.
