They combine the savory goodness of smoked salmon, creamy avocado, and fresh cucumber, all wrapped in a delicate egg crêpe.

Not only are these rolls easy to make, but they also provide a healthy and satisfying start to your day.

Ingredients

This recipe makes 2 servings. You will need the following ingredients:

  • 4 medium eggs
  • 4 oz Alaskan smoked sockeye salmon
  • 1 oz fat cream cheese
  • 1/4 large avocado, cut into 4 slices
  • 1-2 scallions, green parts only
  • About 1/4 English cucumber, cut into sticks
  • Black sesame seeds (optional)
  • Cooking oil
  • Salt

Optional:

  • Kewpie Mayo
  • Sriracha
  • Coconut aminos

Instructions

Step 1: Prepare the Egg Crêpes

  1. Heat a skillet on medium-low heat and add about 1 teaspoon of cooking oil.
  2. Beat two eggs thoroughly in a bowl.
  3. Pour the beaten eggs into the skillet and tilt the skillet around to spread the eggs evenly, forming a thin crêpe.
  4. Sprinkle a little black sesame seeds (optional) and season with a pinch of salt.
  5. Cook for a couple of minutes until the egg sets, then gently flip it over and cook for another minute or so.
  6. Repeat this process with the remaining two eggs to make a second crêpe.
  7. Set the egg crêpes aside to cool down.

Step 2: Assemble the Rolls

  1. Lay one egg crêpe flat on a clean surface.
  2. On one edge of the crêpe, place 2 ounces of smoked salmon.
  3. Add 0.5 oz of low-fat cream cheese (one thin slice) on top of the salmon.
  4. Place 1-2 cucumber sticks, 1 green part of the scallion, and 2 slices of avocado on top of the cream cheese.
  5. Carefully roll the crêpe up like you would roll sushi, ensuring the filling stays inside.

Step 3: Cut and Serve

  1. Once rolled, use a sharp knife to cut the roll into approximately 1/2 inch slices.
  2. Repeat the assembly process with the second egg crêpe and remaining ingredients.
  3. Arrange the egg sushi rolls on a plate.

Optional Toppings and Dips

  • Drizzle with Kewpie Mayo and Sriracha for an extra kick.
  • Serve with coconut aminos for dipping to enhance the flavor.

Conclusion

These egg sushi rolls are not only visually appealing but also packed with nutritious ingredients.

The combination of protein from the eggs and salmon, healthy fats from the avocado, and the freshness of the cucumber and scallions make this a balanced and delicious meal.

Enjoy these rolls as a quick breakfast or a satisfying snack anytime!
