- 1 bell pepper (red or green), thinly sliced
- 1 medium yellow onion, thinly sliced
- 1/2 tsp salt, divided
- 1 Tbs avocado oil

- 4 hoagie rolls or French rolls (6 inches in length)
- 8 oz block Monterey Jack cheese
- 1/2 cup mayonnaise (more if needed)
- 4 Tbs butter, melted + 1/2 tsp garlic salt
Instructions
- Preheat the Oven
Preheat your oven to 375°F (190°C). Start by shredding the 8-ounce block of Monterey Jack cheese and set it aside. This will be used later to make your sandwiches wonderfully cheesy. - Sauté the Vegetables
Heat 1 tablespoon of avocado oil and 1 tablespoon of butter in a large skillet over medium heat. Add the sliced onions and sauté for about 8 minutes until they become soft and translucent. Then, add the sliced bell pepper and 1/4 teaspoon of salt. Continue to sauté for another 6-7 minutes until the peppers are tender.
