Recipe

Ingredients

  • 1 tbsp olive oil
  • 1/2 to 3/4 cup tomato sauce
  • Uncooked lasagna noodles (shaped to fit the baking dish and enough for 3 layers)
  • 1/3 cup low-fat ricotta cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 tbsp grated Parmesan cheese
  • Garlic powder (to taste)
  • Italian seasoning (to taste)
  • Salt and pepper (to taste)

Directions

  1. Preheat the Oven
  • Set your oven to 350°F (175°C) to ensure it’s ready for baking.
  1. Prepare the Baking Dish
  • Use a small baking dish (I used a Staub 5.5 by 4.5 inch dish). Coat the bottom with a mixture of olive oil and a thin layer of tomato sauce. This helps prevent the noodles from sticking and adds extra flavor.
  1. Layer the Lasagna
  • First Layer: Place a layer of uncooked lasagna noodles on top of the sauce.
  • Add Sauce and Cheese: Spread a layer of tomato sauce over the noodles. Then add dollops of ricotta cheese, sprinkle mozzarella cheese, and a bit of Parmesan cheese. Season with garlic powder, Italian seasoning, salt, and pepper to your liking.
  • Repeat: Continue layering noodles, sauce, cheeses, and seasonings until you have three layers. The top layer should be a mix of all the cheeses to create a deliciously cheesy crust.
  1. Bake the Lasagna
  • Place the dish in the oven and bake for 35-40 minutes. You’ll know it’s ready when the noodles are tender and the cheese on top is golden and bubbly.
  1. Cool and Enjoy
  • Let the lasagna cool for a few minutes before digging in. This helps it set and makes it easier to serve.

Tips for Perfect Single Serve Lasagna

  • Shaping the Noodles: You can break the lasagna noodles to fit the size of your dish. No need to worry about perfection—once it’s baked, it will all come together beautifully.
  • Extra Veggies: If you want to add some vegetables, consider layering in some spinach, mushrooms, or zucchini slices for added nutrients and flavor.
  • Meat Lovers: For a heartier lasagna, add a layer of cooked ground beef or sausage between the noodles and sauce.
